A healthier way to enjoy that kiwi classic, fish and chips

  • 500 grams fish fillet
  • 1/2 teaspoon vegetable oil
  • 1 cup breadcrumb wholemeal
  • 1 whole egg

  • Pat fish fillets dry with paper towels so the crumbs will stick.

  • Beat egg with 1 tablespoon of water in a shallow plate. Put breadcrumbs in a shallow plate.

  • Dip fish in egg, and then in breadcrumbs. Coat both sides.

  • Bake for 10 minutes at 230°C. Thicker fillets may need longer.
