Ingredients
- 300 grams lean pork thinly sliced
- 2 teaspoons vegetable oil
- 1 whole onion chopped
- 3-4 cups vegetables mixture of those in seasonal
- 1 teaspoon ginger grated
- 1 tablespoon soy sauce low salt
- 2 tablespoons crunchy peanut butter low salt
- 2 tablespoons sweet chilli sauce
- 2-3 packets hokkien noodles approx 400g
- 3/4 cup chicken stock
- 2 tablespoons honey
Directions
- *recipe contains nuts. For those with nut allergy, remove peanut butter
- Heat the oil in a wok or large frying pan.
- Stir fry the pork, then add the onion and ginger and cook for 2-3 minutes, until onion is soft.
- Add the soy sauce, honey, chilli sauce, peanut butter and stock, then toss in the vegetables and mix well. Stir fry until the vegetables are tender crisp.
- Cook the noodles according to the packet directions.
- Divide the noodles between four bowls and pile on the stir fried pork and vegetables. Spoon over any additional sauce.
