Vegetable curry

A tasty way to get lots of vegetables into one meal. Alternate taste through adding your own list of favourite vegetables.
  • 1 whole onion
  • 1 whole carrot
  • 4 whole potato or a mix of potato and kumara
  • 2 cups green vegetable green beans, broccoli or peas
  • 1 whole apple peeled and chopped
  • 3 whole tomato quartered
  • 2 teaspoons curry powder
  • 1 cup water
  • 1 cup milk low fat
  • 1/2 cup desiccated coconut
  • 1 cup natural yoghurt low fat

  1. Scrub potatoes and carrot, peel onion. Cut into chunky cubes.

  2. Place in a saucepan with curry powder, water, milk and coconut.

  3. Bring to the boil and simmer for 20- 25 minutes.

  4. Add green vegetables, apples and tomatoes. Continue cooking for 5-7 minutes until the vegetables are tender.

  5. Cool a little, add the yoghurt and serve on rice.
